Traditional Irish Stew

An Irish beleif says keep a sprig of thyme in your pocket while passing a faerie mound. It will protect you from mischeif and enable you to see the faeries.
Irish Proverb
A stew boiled is a stew spoiled.
3 pounds of lambtrimmed of fat and bones
2 pounds of potatoes
1 pound of onions
1/2 tablespoon of chopped parsley
1/2 tablespoon of fresh thyme
2 cups of water
Cut meat into small pieces. Peel and slice potatoes and onions. Layer half of the potatoes in a saucepan, then half of the meat and herbs, and finally half of the onion.
Season each layer to taste and repeat the process. Pour water over, cover with a sheet of foil as well as the lid, simmer gently for about 2 hours, occasionally shaking the pan to prevent sticking. Add liquid if it seems dry, A good Irish stew is thick and not like a soup.
