Title: Irish Apple Cake

My friends Catherine and Philip from Tipperary, Ireland say all Irish people have a sweet tooth. Here is one of their favorites, Irish Apple Cake.

4 tablespoons of butter at room temp.
1 cup of granulated sugar.
1 egg, beaten.
4 Granny Smith apples (sliced).
1/4 cup of chopped walnuts.
1 teaspoon of vanilla extract.
1/2 teaspoon of baking powder.
1/2 teaspoon of baking soda.
1/2 teaspoon of salt.
1/2 teaspoon of ground cinnamon.
1/2 teaspoon of ground nutmeg.
1 cup of all purpose flour.
Whipped cream or vanilla ice cream to serve with.

Preheat oven to 350 degrees F. Generously grease an 8 inch square cake pan.

In a large bowl, cream the butter and sugar together until light and fluffy. Add the egg, apples, nuts, and vanilla and stir well. sift the dry ingredients and mix well. Pour the batter into athe prepared pan and bake until the cake is lightly browned and a skewer inserted into the center comes out clean, about 45 minutes.

Let cool for about 5-10 minutes, then unmold and serve warm or at room temp with the whipped cream or ice cream.
